Great Fish Recipe
Here is an excellent recipe for you to try.
Pan-seared pickerel and sun-dried tomato ragout.
Ingredients:
4 pickerel fillets (6oz each)
1 cup flour
1 cup cornmeal
pinch salt and pepper
1/2 cup sun-dried tomato
1/4 cup sliced black olive
1/8 cup capers
1 cup 35% cream
2 cups basmati rice
6 cups water
tbs butter
1/2 cup chopped green onion
3 oz olive oil
Directions:
Place water,rice,butter and pinch of salt and pepper in medium sized pot. Bring to a boil and reduce heat to med-low.
In med sautee pan add sun-dried tomato,olives,capers and cream. Bring to a boil, reduce heat and simmer until tomato’s are soft and cream reduced by 3/4.
Heat a large non-stick pan on med. Place flour,cornmeal,salt and pepper in large ziplock bag. Place pickerel in bag and toss until well coated.
When pan is hot add olive oil. Place fish in pan, and cook till golden brown.(3-4 mins). Flip fish and continue for another 2-3 mins.
Remove fish and place on plate with paper towel.
Once rice is cooked add chopped green onion.
Divide rice amongst 4 plates, top with pickerel. Spoon ragout over top and enjoy.
